Light and bright flavors in this meal incorporate a few different asian cuisines highlighting spring produce and evenings getting longer, finally. These dishes can be served cold, so timing is not an issue.

Menu:
Roasted shiitake sushi with carrot ginger dipping sauce (Sauce: Love and Lemons)
Tofu mushroom lettuce cups (Well Plated by Erin)
Roasted carrot, shredded beet, crunchy chickpea avocado salad
Spring veggie cashew noodles (Love and Lemons)
Lemon bars (recipe)
Preparation:
Day Ahead: Prepare sauces and refrigerate: carrot ginger dipping sauce, noodle sauce, salad dressing. Make lemon bars and refrigerate.
Morning of: Prepare sushi rice in instant pot (recipe). You will want this to cool down before starting on the sushi.
