Summer Veggie Double Date

Sometimes I find a recipe that makes me want to have people over for dinner. In this case, it was this very interesting scarpaccia zucchini tart. That is the highest lift component, paired with relatively straightforward and low effort dishes. This could be squeezed into a weeknight dinner, but more suitable for a Sunday evening with about 2-3 hours of prep time.

Menu:

  • Saucy cherry tomatoes over creamy lemon harissa tahini (Deliciously Ella, made a simple lemon+harissa+tahini sauce rather than hummus)

  • Scarpaccia zucchini tart (Plant You)

  • Miso glazed eggplant (NYT Cooking)

  • Rice pilaf (NYT Cooking, added chickpeas) + greens (red kale massaged with EVOO, lemon, salt and pepper)
